Description

Ingredients

  • 2 zucchinis, diced
  • 1 eggplant, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 large tomatoes, diced
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 cup vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Wash and chop all the vegetables.
  2. Place the vegetables in the slow cooker in layers, starting with eggplant.
  3. Add vegetable broth, dried basil, dried oregano, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, stirring occasionally.
  5. Serve warm as a main dish or side.
