- 2 pounds beef stew meat, cut into bite-sized chunks
- 1 pound baby yellow potatoes, halved
- 5 tablespoons unsalted butter, sliced
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon minced garlic (fresh preferred)
- 2 teaspoons seasoned salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- 1 teaspoon Italian seasoning (optional)
- ½ cup beef broth
- 1 tablespoon Worcestershire sauce
- Optional: ½ teaspoon crushed red pepper flakes, 1 teaspoon fresh thyme or rosemary
Instructions
- Prep the Ingredients:
Wash and halve baby potatoes. Cut beef into bite-sized chunks. Mince fresh garlic and slice butter. - Season:
In a large bowl, toss the beef and potatoes with all dry seasonings (onion powder, garlic powder, seasoned salt, pepper, smoked paprika, Italian seasoning, and red pepper flakes if using). - Layer in the Slow Cooker:
Place half of the butter slices at the bottom of the slow cooker. Add the seasoned beef and potatoes. Top with minced garlic, beef broth, Worcestershire sauce, and the remaining butter slices. - Cook:
Cook on LOW for 6–8 hours or on HIGH for 3–4 hours. Stir once or twice during cooking, if desired. - Serve:
Drizzle garlic butter sauce from the slow cooker over each serving. Garnish with chopped parsley, fresh thyme, or rosemary if desired.
Notes
For crispier potatoes, you can broil them for 3–5 minutes after cooking. Add carrots or mushrooms for more veggies. Use ghee in place of butter for a paleo-friendly version.
