Description
A hearty and easy one-pot slow cooker meal featuring tender beef stew meat, buttery baby potatoes, and rich garlic flavor. Perfect for busy days and meal prepping.
Ingredients
- 2 pounds beef stew meat (chuck or round)
- 1.5 pounds baby Yukon gold potatoes (whole, unpeeled)
- 1 stick unsalted butter, cut into pads
- 5 garlic cloves, minced
- 1 teaspoon seasoned salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- Optional: Fresh rosemary or thyme
Instructions
- Prep the Slow Cooker: Spray the inside of the slow cooker with non-stick spray or use a liner.
- Layer Ingredients: Place beef stew meat on one side and baby potatoes on the other side of the cooker.
- Season: Sprinkle garlic, seasoned salt, onion powder, garlic powder, and pepper over both beef and potatoes.
- Add Butter: Distribute butter pads evenly over the beef and potatoes.
- Cook: Cover and cook on LOW for 6–7 hours, or until the beef is tender and potatoes are soft.
- Rest and Serve: Let rest for 10 minutes, then gently stir everything together and serve warm.
Notes
Add fresh rosemary or thyme for an herbaceous twist. Serve with crusty bread or a green salad for a complete meal.
