Description

A hearty and easy one-pot slow cooker meal featuring tender beef stew meat, buttery baby potatoes, and rich garlic flavor. Perfect for busy days and meal prepping.


Ingredients

  • 2 pounds beef stew meat (chuck or round)
  • 1.5 pounds baby Yukon gold potatoes (whole, unpeeled)
  • 1 stick unsalted butter, cut into pads
  • 5 garlic cloves, minced
  • 1 teaspoon seasoned salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Optional: Fresh rosemary or thyme


Instructions

  1. Prep the Slow Cooker: Spray the inside of the slow cooker with non-stick spray or use a liner.
  2. Layer Ingredients: Place beef stew meat on one side and baby potatoes on the other side of the cooker.
  3. Season: Sprinkle garlic, seasoned salt, onion powder, garlic powder, and pepper over both beef and potatoes.
  4. Add Butter: Distribute butter pads evenly over the beef and potatoes.
  5. Cook: Cover and cook on LOW for 6–7 hours, or until the beef is tender and potatoes are soft.
  6. Rest and Serve: Let rest for 10 minutes, then gently stir everything together and serve warm.

Notes

Add fresh rosemary or thyme for an herbaceous twist. Serve with crusty bread or a green salad for a complete meal.
