Ingredients
- 2 boneless skinless chicken breasts
- 1 can drained corn
- 1 can black beans, drained
- 1 can diced tomatoes with green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon onion powder
- 1 packet ranch seasoning
- 1/2 cup cooked chopped bacon
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
Instructions
- Place chicken breasts in the slow cooker.
- Add corn, black beans, diced tomatoes, chicken broth, spices, and bacon. Stir to combine.
- Place cream cheese on top.
- Cover and cook on LOW for 6-8 hours.
- Shred the chicken and stir in cheddar cheese before serving.
- Taste and adjust seasoning if needed and serve hot.
Notes
For a vegetarian option, substitute chicken with chickpeas or lentils and use vegetable broth.
