Ingredients

  • 2 boneless skinless chicken breasts
  • 1 can drained corn
  • 1 can black beans, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 packet ranch seasoning
  • 1/2 cup cooked chopped bacon
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese


Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add corn, black beans, diced tomatoes, chicken broth, spices, and bacon. Stir to combine.
  3. Place cream cheese on top.
  4. Cover and cook on LOW for 6-8 hours.
  5. Shred the chicken and stir in cheddar cheese before serving.
  6. Taste and adjust seasoning if needed and serve hot.

Notes

For a vegetarian option, substitute chicken with chickpeas or lentils and use vegetable broth.
