Description

A comforting classic transformed into a slow cooker dish, featuring tender chicken, fluffy rice, and vibrant veggies.


Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup frozen peas and carrots
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • Salt and pepper to taste


Instructions

  1. Place diced chicken breast into the slow cooker.
  2. Add cooked rice, frozen peas and carrots, soy sauce, sesame oil, garlic powder, ginger powder, salt, and pepper.
  3. Stir gently to combine all ingredients.
  4. Cover and cook on low for about 4 hours.
  5. In the last 30 minutes of cooking, stir in beaten eggs and chopped green onions.
  6. Once cooking time is complete, give the rice a final stir and serve warm.

Notes

Use day-old rice for the best texture and adjust seasonings according to your taste.
