Ingredients

  • 1/4 cup (56 g) salted butter, softened
  • 1/4 cup (54 g) brown sugar
  • 2 tablespoons granulated sugar
  • 1 egg yolk, at room temp
  • 1/2 teaspoon vanilla extract
  • 1/2 cup (65 g) all-purpose flour
  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup (85 g) chocolate chips (milk, semi-sweet, or dark)


Instructions

  1. In a bowl, combine the softened butter, brown sugar, and white sugar. Mix with a stand mixer or hand mixer for 2-3 minutes until well combined.
  2. Add the egg yolk and vanilla extract, mixing until combined.
  3. Incorporate the flour, cornstarch, baking soda, and salt, mixing until just combined.
  4. Stir in the chocolate chips until evenly distributed in the dough.
  5. Divide the dough in half and shape into cylinders. Wrap in plastic wrap and freeze for 1 hour.
  6. Preheat the oven to 350°F (175°C) when the dough is almost done chilling.
  7. Transfer the dough balls to a parchment-lined baking sheet and bake for 10-12 minutes, until edges are set. Rest on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes
