- 1 pound fresh okra, sliced ⅓ to ½ inch thick
- 1–2 tablespoons olive oil
- Kosher salt, to taste
- Black pepper, to taste
- Optional Additions: Garlic powder or onion flakes, cayenne or Cajun seasoning, lemon juice, grated Parmesan cheese, cherry tomatoes, panko breadcrumbs
Instructions
- Preheat oven to 425°F (220°C).
- Rinse the okra and dry thoroughly with a kitchen towel.
- Trim the stems and slice the pods into ⅓ to ½ inch rounds.
- In a bowl, toss okra with olive oil, salt, and pepper until evenly coated.
- Spread in a single layer on a parchment-lined baking sheet.
- Roast for 15–20 minutes, flipping halfway through, until browned and crisp on the edges.
- Serve hot as a snack or side dish.
Notes
For best results, dry the okra thoroughly before roasting. Add lemon juice or Parmesan just before serving for extra flavor.
