Description

Ingredients

  • 1 pound fresh okra, sliced ⅓ to ½ inch thick
  • 12 tablespoons olive oil
  • Kosher salt, to taste
  • Black pepper, to taste
  • Optional Additions: Garlic powder or onion flakes, cayenne or Cajun seasoning, lemon juice, grated Parmesan cheese, cherry tomatoes, panko breadcrumbs

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse the okra and dry thoroughly with a kitchen towel.
  3. Trim the stems and slice the pods into ⅓ to ½ inch rounds.
  4. In a bowl, toss okra with olive oil, salt, and pepper until evenly coated.
  5. Spread in a single layer on a parchment-lined baking sheet.
  6. Roast for 15–20 minutes, flipping halfway through, until browned and crisp on the edges.
  7. Serve hot as a snack or side dish.

Notes

For best results, dry the okra thoroughly before roasting. Add lemon juice or Parmesan just before serving for extra flavor.
