Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups corn kernels
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a pot over medium heat. Sauté chopped onion and minced garlic until soft and fragrant.
  2. Add corn kernels to the pot and cook for about five minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Add shrimp and cook until pink and opaque, about 3-5 minutes.
