Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup cocktail sauce
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 8 small cups or glasses
Instructions
- Boil the shrimp for 2-3 minutes until pink.
- Drain and cool the shrimp in ice water.
- In a bowl, combine shrimp, avocado, tomatoes, cilantro, lime juice, salt, and pepper.
- Spoon the mixture into the cups or glasses.
- Top each cup with a dollop of cocktail sauce.
- Serve immediately.
Notes
Avoid overcooking the shrimp and using old avocados. Substitute shrimp with crab or scallops if needed.
