Ingredients
- 1 pound shrimp, peeled and deveined
- 1 ripe avocado, diced
- 1 medium mango, diced
- 2 cups cooked rice
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat 2 tablespoons of olive oil in a pan over medium heat.
- Add shrimp to the pan and season with salt and pepper.
- Cook the shrimp until pink and opaque, about 3-4 minutes.
- In a large bowl, combine cooked rice, shrimp, diced avocado, and mango.
- Squeeze lime juice over the mixture and toss gently.
- Garnish with fresh cilantro.
