Description

A comforting soup that captures all the flavors of traditional shepherd’s pie, perfect for chilly evenings.


Ingredients

  • 1 lb ground beef
  • 1 cup potatoes, diced
  • 1 cup cheese, shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp thyme
  • 1 tsp Worcestershire sauce


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in diced potatoes and mixed vegetables.
  4. Pour in beef broth and bring to a boil.
  5. Reduce heat and add thyme, Worcestershire sauce, salt, and pepper. Cover and simmer for 15-20 minutes until potatoes are tender.
  6. Stir in shredded cheese until melted. Serve hot.

Notes

Use lean ground beef to reduce fat. For a vegetarian version, omit meat and use beans or lentils.
