Description
A delicious and easy one-pan meal combining savory sausage, sweet potatoes, and broccoli, topped with a sticky honey garlic sauce.
Ingredients
- 14 oz chicken or turkey sausage, cut into 1/2-inch slices
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 cups broccoli, cut into 1/2-inch florets
- 1 tablespoon unsalted butter
- 4 medium cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the sausage slices, sweet potatoes, and broccoli on a sheet pan.
- In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for about 1 minute, or until fragrant.
- Add honey, soy sauce, apple cider vinegar, salt, and pepper to the saucepan. Stir to combine and bring to a simmer for 2-3 minutes.
- Pour the sauce over the sausage, sweet potatoes, and broccoli. Toss everything to coat evenly.
- Roast in the oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and the sausage is cooked through.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
For best results, cut sweet potatoes and broccoli into similar sizes for even cooking. Leftovers can be stored in the fridge for up to 3 days.
