Ingredients
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 4 whole wheat pitas
- Herby ranch dressing for serving
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine diced chicken, olive oil, garlic powder, paprika, salt, and black pepper.
- Spread the mixture evenly on a sheet pan.
- Add cherry tomatoes and bell pepper, ensuring even distribution.
- Bake for 20-25 minutes until chicken is cooked through (internal temp 165°F / 75°C).
- Warm the whole wheat pitas in the oven for the last 5 minutes of baking.
