Description

This hearty sausage and spinach frittata is the perfect one-skillet meal—packed with protein, greens, and cheesy goodness. It’s great for breakfast, brunch, or a weeknight dinner.

Ingredients

Scale
  • 1/2 pound Italian sausage (or turkey/chicken sausage)
  • 12 cups fresh baby spinach (or thawed and drained frozen spinach)
  • 810 large eggs
  • 1/4 cup milk or heavy cream
  • 1/2 cup shredded cheese (cheddar, mozzarella, or goat cheese)
  • 1/4 cup diced onion (optional)
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for cooking)

Instructions

  1. Preheat oven: Preheat to 375°F (190°C).
  2. Cook sausage: In an oven-safe skillet, heat olive oil over medium heat. Add sausage and cook until browned and fully cooked. Drain excess grease if needed.
  3. Add aromatics: Add diced onion and garlic (if using); sauté for 2 minutes.
  4. Add spinach: Stir in spinach and cook until wilted. Remove skillet from heat.
  5. Prepare eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Stir in shredded cheese and any optional herbs.
  6. Combine: Pour egg mixture evenly over sausage and spinach in the skillet. Let cook on stovetop 2–3 minutes until edges begin to set.
  7. Bake: Transfer skillet to oven and bake for 10–15 minutes until center is just set.
  8. Rest and serve: Let the frittata rest for 5 minutes. Slice and serve warm.

Notes

Feel free to customize with mushrooms, bell peppers, or sun-dried tomatoes. Store leftovers in the fridge and reheat gently for easy meals.
