- 1/2 pound Italian sausage (or turkey/chicken sausage)
- 1–2 cups fresh baby spinach (or thawed and drained frozen spinach)
- 8–10 large eggs
- 1/4 cup milk or heavy cream
- 1/2 cup shredded cheese (cheddar, mozzarella, or goat cheese)
- 1/4 cup diced onion (optional)
- 1 clove garlic, minced (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil or butter (for cooking)
Instructions
- Preheat oven: Preheat to 375°F (190°C).
- Cook sausage: In an oven-safe skillet, heat olive oil over medium heat. Add sausage and cook until browned and fully cooked. Drain excess grease if needed.
- Add aromatics: Add diced onion and garlic (if using); sauté for 2 minutes.
- Add spinach: Stir in spinach and cook until wilted. Remove skillet from heat.
- Prepare eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Stir in shredded cheese and any optional herbs.
- Combine: Pour egg mixture evenly over sausage and spinach in the skillet. Let cook on stovetop 2–3 minutes until edges begin to set.
- Bake: Transfer skillet to oven and bake for 10–15 minutes until center is just set.
- Rest and serve: Let the frittata rest for 5 minutes. Slice and serve warm.
Notes
Feel free to customize with mushrooms, bell peppers, or sun-dried tomatoes. Store leftovers in the fridge and reheat gently for easy meals.
