Ingredients

  • 1 pound Italian sausage
  • 1 chopped onion
  • 2 cloves minced garlic
  • 3 sliced carrots
  • 3 sliced celery stalks
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale
  • Grated Parmesan cheese (for serving)


Instructions

  1. Brown the Italian sausage in a large pot over medium heat, then drain excess fat.
  2. Add chopped onion and minced garlic, cooking until translucent.
  3. Toss in sliced carrots and celery and cook for 5 minutes.
  4. Add diced tomatoes and chicken broth, along with oregano, basil, salt, and pepper. Bring to a simmer.
  5. Reduce heat and let the soup simmer for 15-20 minutes.
  6. Stir in spinach or kale and cook until wilted.
