Ingredients
- 1 pound Italian sausage
- 1 chopped onion
- 2 cloves minced garlic
- 3 sliced carrots
- 3 sliced celery stalks
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach or kale
- Grated Parmesan cheese (for serving)
Instructions
- Brown the Italian sausage in a large pot over medium heat, then drain excess fat.
- Add chopped onion and minced garlic, cooking until translucent.
- Toss in sliced carrots and celery and cook for 5 minutes.
- Add diced tomatoes and chicken broth, along with oregano, basil, salt, and pepper. Bring to a simmer.
- Reduce heat and let the soup simmer for 15-20 minutes.
- Stir in spinach or kale and cook until wilted.
