A hearty Sausage Potato Soup combining savory sausage with tender potatoes for a comforting winter meal.
Ingredients
- 1 pound sausage
- 4 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, brown the sausage over medium heat until fully cooked.
- Add the onion and garlic, cooking until softened.
- Stir in the diced potatoes and chicken broth.
- Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with chopped parsley.
Notes
For a lighter version, reduce the amount of heavy cream or substitute it with half-and-half.
