  • 4 cups (about 1 liter) chicken broth
  • 3-4 medium potatoes, peeled and diced
  • 4 cups kale, washed and chopped (stems removed)
  • 1 cup heavy cream or half-and-half

Instructions

  1. Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned. Remove sausage, leaving rendered fat in the pot.
  2. Add onion to the pot, sauté until translucent, about 5 minutes. Stir in garlic, cooking for another 1–2 minutes until fragrant.
  3. Pour in chicken broth and return sausage to the pot. Add diced potatoes and bring to a simmer. Cover and cook for about 15-20 minutes until potatoes are tender.
  4. Stir in chopped kale and simmer until wilted to your liking, about 5 minutes. Gradually add heavy cream or half-and-half, heating the soup through without boiling.
  5. Season with salt and pepper. Serve hot.
