Ingredients
- 2 cups potatoes, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 carrots, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and cook until translucent.
- Stir in the carrots and mushrooms, cooking until soft.
- Add the diced potatoes and pour in the vegetable broth. Bring to a boil.
- Reduce the heat and let it simmer for about 20 minutes or until the potatoes are tender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot and garnish with fresh dill.
