Ingredients
- 1 sheet puff pastry
- 2 cups mixed vegetables (zucchini, bell peppers, onions)
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 egg
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a baking sheet, stretching slightly to cover the sheet.
- In a mixing bowl, combine ricotta cheese, egg, salt, and pepper. Stir until well-blended.
- Spread the ricotta mixture evenly over the puff pastry.
- Chop the mixed vegetables and toss them in olive oil, salt, and pepper.
- Spread the tossed vegetables over the ricotta layer.
- Sprinkle the shredded mozzarella cheese generously over the top.
- Bake for 25–30 minutes or until golden brown.
- Remove from the oven and let cool for a few minutes before cutting into squares.
- Garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container for up to 3–4 days. Reheat in the oven to maintain crispiness.
