Description

Ingredients

  • 1 sheet puff pastry
  • 2 cups mixed vegetables (zucchini, bell peppers, onions)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a baking sheet, stretching slightly to cover the sheet.
  3. In a mixing bowl, combine ricotta cheese, egg, salt, and pepper. Stir until well-blended.
  4. Spread the ricotta mixture evenly over the puff pastry.
  5. Chop the mixed vegetables and toss them in olive oil, salt, and pepper.
  6. Spread the tossed vegetables over the ricotta layer.
  7. Sprinkle the shredded mozzarella cheese generously over the top.
  8. Bake for 25–30 minutes or until golden brown.
  9. Remove from the oven and let cool for a few minutes before cutting into squares.
  10. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container for up to 3–4 days. Reheat in the oven to maintain crispiness.
