Ingredients
- 2 sweet potatoes

Instructions
- Preheat the oven to 425°F (220°C).
- Peel and chop the sweet potatoes into even-sized cubes.
- In a large bowl, toss the sweet potatoes with olive oil, salt, pepper, and any optional ingredients like rosemary or garlic.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Serve warm as a side dish.
Notes
For extra crispiness, broil the sweet potatoes for a few minutes after roasting. You may also add other vegetables like carrots or bell peppers for a colorful veggie mix.
