Ingredients
- 1 sweet potato (150-200g)
- 150-200g plain yogurt
- 1 tablespoon honey
- 2 tablespoons chopped nuts
- Chopped parsley (optional)
Instructions
- Preheat the oven to 180°C (350°F).
- Wash and dry the sweet potato. Use a fork to poke holes in it several times.
- Wrap the sweet potato in parchment paper and bake it in the oven for 40-50 minutes, until tender.
- Once cooked, cut the sweet potato in half lengthwise. Top with yogurt, drizzle with honey, and sprinkle with chopped nuts. Optionally, add parsley for decoration.
Notes
To store leftovers, place the sweet potato in an airtight container in the refrigerator for up to 3 days. Add toppings just before eating.
