Ingredients
- 2 large sweet potatoes, sliced into rounds
- 1/4 cup honey
- 1/4 cup crumbled feta cheese
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato rounds with olive oil and arrange them in a single layer on a baking sheet.
- Roast in the preheated oven for about 25 minutes, flipping halfway through, until they are tender and slightly caramelized.
- Drizzle honey over the roasted sweet potatoes and sprinkle with crumbled feta cheese before serving.
