Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced pumpkin with olive oil, salt, and pepper.
- Spread the pumpkin on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and caramelized.
- Once removed from the oven, drizzle with honey and sprinkle with feta cheese.
