Description

Delicious Roasted Pepper and Feta Tartlets wrapped in buttery puff pastry, perfect for appetizers or snacks.


Ingredients

  • 1 sheet of puff pastry
  • 2 roasted red peppers, diced
  • 100g feta cheese, crumbled
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Roll out the puff pastry on a floured surface.
  3. Cut the pastry into squares and place them in a muffin tin.
  4. In a bowl, mix the roasted peppers, feta cheese, olive oil, salt, and pepper.
  5. Spoon the mixture into each pastry shell.
  6. Brush the edges of the pastry with the beaten egg.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow to cool slightly before serving.

Notes

For longer storage, freeze tartlets for up to 2 months. Reheat in the oven at 180°C (350°F) for about 10-15 minutes.
