Instructions
- Preheat oven to 425°F (220°C).
- Line a baking sheet with foil or parchment paper.
- Slice okra into even 1/3-inch rounds.
- Toss sliced okra with olive oil, salt, and pepper in a mixing bowl or ziplock bag.
- Spread okra in a single layer on the prepared baking sheet.
- Roast for 15–20 minutes, stirring halfway through, until lightly browned and crispy.
