Description
Delicious and healthy roasted Brussels sprouts, crispy on the outside and tender on the inside, topped with a flavorful dressing.
Ingredients
- 1 pound Brussels sprouts, halved
- ½ tablespoon extra virgin olive oil
- ½ teaspoon salt (+ 2 twists of black pepper)
- 2 tablespoons extra virgin olive oil (for dressing)
- 1 tablespoon apple cider vinegar
- 1 tablespoon orange juice (or lemon juice)
- 2 teaspoons maple syrup (or honey)
- 2 teaspoons mustard
- ½ teaspoon salt (for dressing)
- 2 twists black pepper (for dressing)
Instructions
- Preheat the oven to 400°F (200°C). Optionally, line a baking sheet with parchment paper.
- Trim the woody stem of the Brussels sprouts and remove any outer leaves that are brown.
- Rinse the sprouts under cold water and pat dry with a kitchen cloth.
- Cut the sprouts in half lengthwise and add them to your baking tray.
- Toss the halved sprouts with ½ tablespoon extra virgin olive oil, ½ teaspoon salt, and 2 twists of black pepper. Arrange them in a single layer.
- Roast the Brussels sprouts in the oven for 20-25 minutes until slightly charred and tender.
- While the sprouts roast, make the dressing by mixing together 2 tablespoons extra virgin olive oil, 1 tablespoon apple cider vinegar, 1 tablespoon orange juice, 2 teaspoons maple syrup, 2 teaspoons mustard, ½ teaspoon salt, and 2 twists of black pepper in a jar. Shake well to combine.
- After roasting, transfer the sprouts to a serving platter and drizzle with the dressing.
Notes
For a special touch, consider adding some boiled chestnuts, tahini sauce, pomegranate seeds, or crushed hazelnuts.
