Ingredients
- 2 medium beets, roasted
- 2 oranges, segmented
- 1 cup walnuts, toasted
- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Gather all the ingredients needed.
- Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for 45 to 60 minutes until tender.
- Segment the oranges by cutting off the top and bottom, then slicing away the peel and pith to reveal the flesh.
- Toast walnuts in the oven for 8 to 10 minutes until fragrant.
- Once beets are roasted and cooled, peel and slice them into wedges or rounds.
- In a large bowl, combine mixed greens, orange segments, and toasted walnuts. Fold in the roasted beet slices.
- Whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing and drizzle over the salad before serving.
- Top with crumbled feta cheese and serve immediately.
Notes
For best freshness, dress the salad just before serving. Store leftovers in an airtight container for up to 3–4 days without the dressing.
