Description

Ingredients

  • 3-4 pounds beef roast (ribeye or sirloin)
  • 2 tablespoons olive oil (extra virgin)
  • Salt and pepper to taste
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1 onion, chopped (optional)
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • Fresh rosemary and thyme (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the beef roast generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Sear the roast on all sides until browned, about 3-4 minutes per side.
  5. Remove the roast from the skillet and set it aside.
  6. In the same skillet, add the onions, carrots, and garlic, and sauté until softened, about 5 minutes.
  7. Add the red wine and Worcestershire sauce, scraping up any brown bits.
  8. Return the roast to the skillet, pour in the beef broth, and add fresh herbs if using.
  9. Cover the skillet and transfer to the oven. Roast for about 90-120 minutes, or until the internal temperature reaches desired doneness.
  10. Remove from the oven, let it rest for 10-15 minutes before slicing.
  11. Serve with the red wine gravy.
