Ingredients
- 2 cups ricotta cheese
- 1 cup grated Parmesan cheese
- 1 cup chopped fresh herbs (parsley, basil, thyme)
- 4 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine ricotta cheese, grated Parmesan, chopped herbs, eggs, salt, pepper, and nutmeg. Mix thoroughly until smooth and creamy.
- Gently fold in the halved cherry tomatoes and drizzle with olive oil.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Top with breadcrumbs.
- Bake for 30-35 minutes, or until the top is golden and the center is set.
