- 2 yellow onions, chopped
- 2 leeks (only white part), chopped (~1 cup)
- 3 garlic cloves, chopped
- 8 oz (250 g) brown mushrooms, chopped
- 3 cups (300 g) peeled and cubed potatoes (~10 oz)
- 1 teaspoon salt
- Pinch of black pepper
- 5 cups (1.15 l) broth
- ½ cup (115 ml) dry white wine (optional)
- 1 sprig fresh thyme, chopped
- 1 sprig fresh parsley, chopped
- 1 sprig fresh marjoram
- 1 sprig fresh lemon balm
- 1 cup (40 g) grated parmesan or nutritional yeast
- ½ cup (115 ml) heavy cream or plant-based cooking cream
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions, leeks, and garlic, sautéing until translucent.
- Incorporate the chopped mushrooms, stirring until they begin to soften.
- Add the chopped potatoes, salt, and black pepper.
- Pour in the broth and optional wine, then simmer for 20 minutes.
- Add the thyme, parsley, marjoram, and lemon balm, simmer for another 10 minutes.
- Blend the soup to a smooth consistency, then return to the pot.
- Stir in the cheese or nutritional yeast and cream or plant-based cream.
- Warm through gently without boiling.
