Ingredients
- 1 can white beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the white beans, cherry tomatoes, cucumber, red onion, parsley, and basil. Toss gently.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
