Description
A refreshing and vibrant cucumber tomato salad with red onion and a light olive oil–vinegar dressing. Perfect for summer meals or as a quick side dish.
Ingredients
- 1 English cucumber, sliced
- 2 to 3 large ripe tomatoes, diced
- ½ medium red onion, thinly sliced
- 1 tablespoon fresh herbs (any combo of parsley, basil, and/or dill), optional
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and black pepper to taste
Instructions
- Make the dressing: In a large bowl, whisk together olive oil, red wine vinegar, herbs (if using), salt, and pepper.
- Combine: Add sliced cucumber, tomatoes, and red onion to the bowl.
- Toss: Toss everything together until evenly coated.
- Chill: Refrigerate for at least 20 minutes to let flavors meld.
- Serve: Serve cold and enjoy!
Notes
This salad is best enjoyed fresh but can be stored in the fridge for up to 1 day. Add crumbled feta or chickpeas for extra protein.
