Description
Delicious and healthy Raspberry Yogurt Bites made with fresh raspberries and yogurt, perfect for a refreshing snack.
Ingredients
- 1 cup raspberries
- 1 cup yogurt of choice (plain or vanilla)
- 3/4 cup chocolate chips (optional)
Instructions
- Mash the raspberries in a bowl.
- Add the yogurt to the mashed raspberries and stir until well combined.
- Line a mini muffin tin with liners or use a silicone muffin pan for easy removal.
- Scoop the raspberry yogurt mixture into the prepared muffin tin, filling each cup about halfway.
- Place the muffin tin in the freezer and freeze for at least 4 hours, or until the yogurt bites are completely set.
- Once frozen, melt the chocolate chips in the microwave for about 1 minute, stirring until smooth.
- Remove the frozen yogurt bites from the freezer and drizzle or spread the melted chocolate over the top of each bite.
- Return to the freezer for a few minutes until the chocolate is set.
- Once the chocolate is set, remove the yogurt bites from the muffin tin and serve immediately, or store them in the freezer for later.
Notes
Serve chilled; they are also great for kids’ birthday parties or as a refreshing dessert for adults. Store in an airtight container in the freezer for 2-3 months.
