Description
Delicious soft-boiled eggs marinated in a flavorful soy sauce mixture, perfect for ramen or as a snack.
Ingredients
- 6 large eggs
- Vinegar (optional for boiling eggs)
- ½ cup soy sauce (light sodium)
- ¼ cup water
- ¼ cup mirin
- 2 tablespoons granulated sugar
Instructions
- Bring a pot of water to a boil and gently place the eggs in the boiling water. Boil for 6 minutes.
- Remove the eggs and shock them in ice water until completely cool.
- While the eggs cool, prepare the marinade by mixing soy sauce, water, mirin, and sugar in a container until the sugar dissolves.
- Peel the cooled eggs and place them in the marinade. Let them soak for at least 8 hours, ideally overnight.
- Serve the eggs sliced in half on ramen, as a side dish, or enjoy them on their own.
Notes
For easier peeling, consider using vinegar in the boiling water. Fresh eggs yield the best results. Adjust marinating time based on desired flavor strength.
