Ingredients
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 1 cup cucumber, sliced
- 1 cup carrots, shredded
- 1/2 cup red cabbage, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- In a large bowl, combine mixed greens, tomatoes, bell peppers, cucumber, carrots, red cabbage, and red onion.
- Add feta cheese and olives to the bowl.
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately or chill in the fridge for 30 minutes before serving.
