Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Rinse the quinoa under cold water.
  2. Heat the olive oil in a large pot over medium heat.
  3. Sauté the minced garlic until fragrant, about 1 minute.
  4. Add the chopped carrots, bell peppers, and zucchini; cook for 5 minutes.
  5. Stir in diced tomatoes, rinsed quinoa, vegetable broth, cumin, salt, and pepper.
  6. Bring the mixture to a boil.
  7. Reduce heat and let it simmer for 20 minutes.
  8. Remove from heat and let it rest for 5 minutes before serving.

Notes

For added creaminess, consider adding a splash of coconut milk. Vary the vegetable selection according to the season for a fresh taste.
