Description

A colorful and healthy quinoa veggie bowl that’s easy to prepare and packed with nutrients.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, cherry tomatoes, cucumber, bell pepper, avocado, red onion, and cilantro.
  7. Drizzle with olive oil and lemon juice.
  8. Season with salt and pepper.
  9. Toss gently to combine.
  10. Serve immediately or chill before serving.
