Delicious quinoa stuffed tomatoes that are easy to make and packed with flavor and nutrients.
Ingredients
- 4 large tomatoes
- 1 cup cooked quinoa
- 1/2 cup black beans, rinsed
- 1/2 cup corn
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the insides.
- In a bowl, mix cooked quinoa, black beans, corn, cumin, salt, pepper, and cilantro.
- Stuff each tomato with the quinoa mixture.
- If using, sprinkle cheese on top of each stuffed tomato.
- Place the tomatoes in a baking dish and bake for 25-30 minutes.
- Remove from the oven and let cool for a few minutes before serving.
Notes
You can substitute bell peppers for tomatoes or try different grains like brown rice or couscous.
