Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine the rinsed quinoa and water. Bring to a boil, then reduce to a simmer for 15 minutes.
  4. Toss diced veggies in a large bowl with olive oil, salt, and pepper.
  5. Spread the veggies onto a baking sheet and roast for 20-25 minutes until tender.
  6. Once the quinoa is cooked, fluff it with a fork and let it cool.
  7. Combine quinoa, roasted veggies, parsley, and lemon juice in a large bowl.
  8. Serve warm or at room temperature.
