Description

A quick and nutritious Quinoa Black Bean Fiesta Bowl that’s packed with flavor and perfect for any meal.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste


Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed.
  4. Fluff quinoa with a fork and let it cool slightly.
  5. In a large bowl, combine black beans, corn, red bell pepper, avocado, and cilantro.
  6. Add the cooled quinoa to the bowl.
  7. Drizzle lime juice over the mixture.
  8. Season with salt and pepper.
  9. Toss gently to combine.
  10. Serve in bowls and enjoy.

Notes
