Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • Garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter divided
  • 6 garlic cloves minced
  • 1 medium onion diced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper optional for heat
  • 1 teaspoon garam masala
  • ¼ cup freshly chopped parsley optional, for garnish


Instructions

  1. Marinate the chicken with salt, garlic powder, paprika, curry powder, and Greek yogurt. Set it aside for about 15 minutes.
  2. In a large skillet, heat vegetable oil and butter over medium-high heat until melted and hot.
  3. Add the marinated chicken to the skillet and cook for about 5 minutes until browned on all sides. Transfer the chicken to a plate.
  4. In the same skillet, using the remaining oil and butter, sauté the minced garlic and diced onion until the onion is translucent and fragrant.
  5. Pour in the tomato sauce and stir in the sugar, salt, and black pepper. Let the sauce simmer for 5 minutes, allowing it to thicken slightly.
  6. Reduce the heat to low and gently stir in the heavy cream, cayenne pepper, garam masala, and additional curry powder. Reintroduce the cooked chicken, stirring well to coat it with the sauce.
  7. Simmer on low for another 10 minutes. Adjust seasoning if needed and garnish with parsley before serving with rice or naan.
