Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 15-ounce can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread
  • Steamed rice


Instructions

  1. Marinate the chicken with salt, garlic powder, paprika, curry powder, and Greek yogurt; let it sit for 30 minutes.
  2. Heat vegetable oil in a skillet, cook marinated chicken until browned and cooked through (5-7 minutes). Set aside.
  3. Add butter to the skillet; cook minced garlic and diced onion until soft (3-4 minutes).
  4. Pour in tomato sauce, add sugar, salt, and black pepper; mix well.
  5. Return chicken to the skillet; pour in heavy cream and mix. Season with cayenne pepper, garam masala, and curry powder. Let simmer on low for 10 minutes.
  6. Stir in remaining butter just before serving.
  7. Serve hot over rice or with naan, garnished with parsley if desired.

Notes

For extra flavor, marinate chicken overnight. Adjust spices to your taste. Use cream for a richer sauce or coconut milk for a lighter option.
