Description

Soft, chewy cookies that combine the warm flavors of cinnamon with the sweetness of fresh apples.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples
  • 1/2 cup sugar (for rolling)
  • 1 tablespoon cinnamon (for rolling)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. In a small bowl, mix together the sugar and cinnamon for rolling.
  7. Scoop the dough into balls and roll them in the cinnamon-sugar mixture.
  8. Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are golden brown but the centers are still soft.
  10. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
