- 1 1/2 cups shredded zucchini (drained well)
- 1 cup sharp cheddar cheese, grated
- 2 eggs
- 1/3 cup vegetable oil or melted butter
- 1/4 cup milk
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp garlic powder (optional)
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and black pepper.
- In a separate bowl, beat the eggs, oil, and milk until smooth.
- Stir wet ingredients into the dry ingredients until just combined—do not overmix.
- Fold in the shredded zucchini and grated cheddar cheese.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Make sure the zucchini is well-drained to avoid excess moisture. This bread pairs perfectly with soups, salads, or can be toasted with butter.
