Ingredients

  • 1 cup steel cut oats
  • 4 cups water
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 2 tablespoons maple syrup
  • 1/2 cup milk of choice


Instructions

  1. Boil water in a pot.
  2. Add steel cut oats and salt.
  3. Reduce heat and simmer for 20-30 minutes.
  4. Stir in pumpkin puree and pumpkin pie spice.
  5. Add maple syrup and milk, mix well.
  6. Cook for another 5 minutes.
  7. Serve warm.

Notes

For creamier oats, simmer closer to 30 minutes and add more milk at the end. Portion and freeze for quick reheating on busy mornings.
