Description
Soft, fluffy pumpkin cinnamon rolls filled with warm spices and topped with your choice of frosting: cream cheese, maple glaze, or pumpkin pie icing. A perfect fall treat!

Dough:
- 1 cup pumpkin puree
- 3 ½ cups all-purpose or bread flour
- 2 ¼ tsp instant yeast (or one packet)
- ¼ cup brown sugar
- ¼ cup granulated sugar
- ¾ cup warm whole milk
- ¼ cup melted unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- ¼ tsp ground ginger
- ½ tsp salt
Filling:
- ⅓ cup softened butter
- ½ cup brown sugar
- 1 tbsp cinnamon
- 1 tsp pumpkin pie spice
Frosting (choose one):
- Cream cheese frosting
- Maple glaze
- Pumpkin pie icing
Instructions
- Make the Dough: In a large bowl, mix warm milk, brown sugar, granulated sugar, and yeast. Let sit for 5 minutes until foamy.
- Add pumpkin puree, melted butter, eggs, and vanilla extract. Stir well.
- Mix in flour, cinnamon, nutmeg, cloves, ginger, and salt. Knead until the dough is smooth and elastic (about 8–10 minutes by hand or 5–6 minutes with a dough hook).
- Cover the dough and let rise in a warm place for 1–2 hours, or until doubled in size.
- Make the Filling: In a small bowl, combine brown sugar, cinnamon, and pumpkin pie spice.
- Roll out the dough into a large rectangle. Spread softened butter evenly across the surface, then sprinkle the sugar-spice mixture on top.
- Shape the Rolls: Roll the dough tightly into a log. Use floss or a sharp knife to slice into even rolls. Place in a greased baking dish.
- Cover and let rise again for 30–45 minutes.
- Bake: Preheat oven to 350°F (175°C). Bake rolls for 25–30 minutes, or until golden brown.
- Frost: While still warm, spread your choice of frosting and serve immediately.
Notes
These rolls are best enjoyed warm. You can refrigerate the shaped rolls overnight before the second rise for fresh baking in the morning. Add crushed pecans or drizzle with maple syrup for extra richness.
