Description

Easy and delicious pulled chicken quesadilla triangles that are quick to prepare and customizable for any craving.


Ingredients

  • 2 cups cooked pulled chicken
  • 1 cup shredded cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 flour tortillas
  • 1 tablespoon olive oil


Instructions

  1. Preheat your skillet over medium heat.
  2. In a bowl, mix pulled chicken, cheese, bell peppers, onions, cumin, and chili powder.
  3. Place a tortilla in the skillet and add a portion of the chicken mixture on one half.
  4. Fold the tortilla over and cook until golden brown, about 3-4 minutes.
  5. Flip and cook the other side until golden and cheese is melted.
  6. Remove from skillet and cut into triangles.
  7. Repeat with remaining tortillas and filling.

Notes

Feel free to customize your quesadillas with additional ingredients such as jalapeños or different types of cheese.
