Description

A flavorful and nutritious chicken fried rice packed with protein and colorful vegetables, perfect for busy weeknight dinners.


Ingredients

  • 1 lb lean chicken breast, diced
  • 2 cups cooked whole grain rice
  • 1 cup mixed vegetables (such as carrots, peas, and bell peppers)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste


Instructions

  1. Heat sesame oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 6-8 minutes.
  2. Push chicken to one side of the skillet and scramble the beaten eggs in the other side.
  3. Add mixed vegetables and cooked rice to the skillet.
  4. Pour soy sauce over the mixture, add green onions, and season with salt and pepper. Mix until heated through.
  5. Serve hot and enjoy!

Notes
