A flavorful and nutritious chicken fried rice packed with protein and colorful vegetables, perfect for busy weeknight dinners.
Ingredients
- 1 lb lean chicken breast, diced
- 2 cups cooked whole grain rice
- 1 cup mixed vegetables (such as carrots, peas, and bell peppers)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat sesame oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 6-8 minutes.
- Push chicken to one side of the skillet and scramble the beaten eggs in the other side.
- Add mixed vegetables and cooked rice to the skillet.
- Pour soy sauce over the mixture, add green onions, and season with salt and pepper. Mix until heated through.
- Serve hot and enjoy!
Notes
For best results, use day-old rice for a non-sticky texture. Customize with any leftover proteins or veggies.
