Description

A cozy blend of potstickers and flavorful broth, perfect for chilly days.


Ingredients

  • 12 frozen or homemade potstickers
  • 4 cups of low-sodium chicken broth
  • 1 tablespoon of fresh ginger, grated
  • 3 cloves of garlic, minced
  • 2 green onions, chopped (plus extra for garnish)
  • 2 tablespoons of low-sodium soy sauce
  • 1 cup of sliced carrots
  • 2 cups of chopped bok choy
  • 1 teaspoon of sesame oil


Instructions

  1. In a large pot over medium heat, pour in the chicken broth, followed by the grated ginger and minced garlic. Let simmer for about 5 minutes.
  2. Add the potstickers to the broth and cook for 5 to 7 minutes, or until they float to the surface.
  3. Stir in the sliced carrots and chopped bok choy, cooking for an additional 3 to 5 minutes until the vegetables are tender.
  4. Add soy sauce to taste, adjusting as necessary.
  5. Before serving, sprinkle with chopped green onions and drizzle sesame oil on top.

Notes

Store in an airtight container for 3 to 4 days in the refrigerator or freeze for up to 2 months.
