A cozy blend of potstickers and flavorful broth, perfect for chilly days.
Ingredients
- 12 frozen or homemade potstickers
- 4 cups of low-sodium chicken broth
- 1 tablespoon of fresh ginger, grated
- 3 cloves of garlic, minced
- 2 green onions, chopped (plus extra for garnish)
- 2 tablespoons of low-sodium soy sauce
- 1 cup of sliced carrots
- 2 cups of chopped bok choy
- 1 teaspoon of sesame oil
Instructions
- In a large pot over medium heat, pour in the chicken broth, followed by the grated ginger and minced garlic. Let simmer for about 5 minutes.
- Add the potstickers to the broth and cook for 5 to 7 minutes, or until they float to the surface.
- Stir in the sliced carrots and chopped bok choy, cooking for an additional 3 to 5 minutes until the vegetables are tender.
- Add soy sauce to taste, adjusting as necessary.
- Before serving, sprinkle with chopped green onions and drizzle sesame oil on top.
Notes
Store in an airtight container for 3 to 4 days in the refrigerator or freeze for up to 2 months.
