Description

Ingredients

  • 2 pounds Potatoes
  • 1/4 cup Olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Vinegar
  • 1 Red onion, diced
  • 2 sticks Celery, diced
  • 1/4 cup Fresh herbs (parsley, dill), chopped


Instructions

  1. Boil the potatoes until tender.
  2. In a separate bowl, whisk together olive oil, Dijon mustard, and vinegar.
  3. Once potatoes are cool, chop them and mix with diced red onion, celery, and fresh herbs.
  4. Pour the dressing over the potato mixture and toss gently.
  5. Season with salt and pepper to taste.
  6. Chill before serving.

Notes

For best flavor, use fresh herbs. Make the salad a day ahead to let the flavors blend.
