Ingredients
- 2 pounds Potatoes
- 1/4 cup Olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons Vinegar
- 1 Red onion, diced
- 2 sticks Celery, diced
- 1/4 cup Fresh herbs (parsley, dill), chopped
Instructions
- Boil the potatoes until tender.
- In a separate bowl, whisk together olive oil, Dijon mustard, and vinegar.
- Once potatoes are cool, chop them and mix with diced red onion, celery, and fresh herbs.
- Pour the dressing over the potato mixture and toss gently.
- Season with salt and pepper to taste.
- Chill before serving.
